Super easy and delicious orange poppy seed cake

I have not blogged in about a week or so. Not that that I have not been been busy in the kitchen but a lot of my spare time has been taken up by end of the school year preparations. As a teacher, I try to make it a point NOT to take my work home with me, but sometimes it is unavoidable.  Sometimes, home is the only place where I can get things done without gettting consistently interrupted. Those preparations include designing the end of term exams as well as preparing the day to day lessons and homework. I confess that sometimes I work like a maniac in one shot just in order to make ore time for myself later. I don´t procrastinate and I never wait until the last minute for anything. At any rate, this weekend I had a long weekend and I did nothing that was work related. It felt wonderful. I celebrated the freedom by making this cake and enjoying it with a cup of tea. Yhere are very few days of cool weather remaining so it was worth it to enjoy them with tea and cake. The recipe is from taste.com and can be found here

50g unsalted butter, melted (At room temperature)

1 tablespoon finely grated orange rind

1 cup caster sugar

2 eggs

1 cup self-raising flour

2 tablespoons poppyseeds

1/3 cup reduced-fat milk (I used regular milk)

icing sugar mixture, to serve

  2. Wow! I’m impressed as a teacher that you managed to have whole weekend off and this cake looks like the perfect thing to celebrate that with!     1. Hi! Thank you so much! Cooking or baking is a good way to distance myself from work. It is so relaxing! And honestlty, this was so easy and quick that it required very little effort at all! Have a great weekend!
