Turkey croquettes, anyone?

I was doing an excavation of my freezer and discovered that I had leftover Christmas turkey. (Ok, I admit it. I often forget to label what I put in the freezer.) It was a pleasant surprise because I didn’t find anything too tempting in the fridge to make for lunch. So..the next question was..”What to make?”  I didn’t feel like making a stew or a soup because it was an uncharacteristically warm Saturday afternoon.I decided to make croquettes because they make me think of relaxing sunny days in Spain.I think of sitting back with a cold beer or tinto de verano and enjoying tapas. I adapted this recipe is from The Food Network

Ingredients

6 tablespoons butter

1/2 cup flour

1 cup milk

1 cup chicken broth

2 teaspoons lemon juice

2 tablespoons snipped parsley

2 teaspoons grated onion

1/2 teaspoon celery salt

Dash each pepper, paprika, and nutmeg

4 cups ground, cooked turkey

3/4 cup fine bread crumbs

2 eggs mixed with water [I put about two tablespoons of water]

Flour, for dredging

Olive oil for frying

Directions

In a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.

Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.

In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs.

Lightly shape balls into little logs. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Set aside on a tray covered in parchment pare and leave them to set in the fridge.

I left them in the fridge for about half an hour. Pour the olive oil in a medium frying pan. Pour enough so that when you place the croquettes they will be nearly completely covered.
Heat the oil on high medium heat. Take the croquettes out of the fridge and fry 4 or 5 croquettes at a time. Fry them for about 3 minutes or so on each side.
Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain on a plate covered with a few paper towels.

Serve warm!

  1. I absolutely LOVE croquettes. When I visited Spain a few years ago, I couldn’t get enough of them. Your recipe looks so delicious! Can’t wait to try it out. 🙂

    1. Me too! They are so common here in Spain, it’s true. People often buy the frozen ones in a box and I have to tell you, they are pretty crappy. It is not hard to make your own and taste so much better. Thank you so much! 😘😘😘😘

  2. Aaaaaah I do love croquettes, but I don’t cook them at home, because it’s a bit not healthy and I’m trying to consume deep-fried food rare and outside… but of course it’s so delicious! 😀

  3. I have never been able to make a croquette that really resembled the kind I had in Spain. I’m willing to give these a try though. I presume they can be frozen and reheated?

    1. I should have included this in the recipe. I will add it now. Don´t cook them and then freeze them. Just set them aside until they actually ¨set¨then put them in a container to freeze. When you are ready to fry, just take them out and fry directly. You don´t need to defrost them. They will take more time to fry but don´t worry, they will turn out fine!
