So I have been searching for some tapas that I can always have at the ready that anyone can nibble on while have a chat with their beer or wine. MYRTLE ALLEN’s QUICK CUCUMBER PICKLE
6 cups unpeeled cucumber, thinly sliced
3 small onions, thinly sliced
1-3/4 cups sugar
2 tablespoons salt
1 cup cider vinegar
Combine cucumber and onion slices in a large bowl. Mix sugar, salt and vinegar and pour over the cucumbers and onions. Cover the bowl and refrigerate. The pickle will be ready to eat in an hour, it will keep more than a week in the refrigerator, but will soon lose its green color. Yields about 7-l/2 cups.
