“Stewed” tortilla

This recipe is quite unusual as you can probably tell by its name. Stewed?  Still, please don not let that put you off. It really is not stewed but it has a sauce, or topping if you will, which makes this tortilla WONDERFUL! It gives the tortilla a very moist consistency as though it had been stewed.

Ingredients:

5 medium potatoes, peeled and sliced thinly

5 eggs

salt and pepper

olive oil

1/2 of a medium onion, choppped finely

1 teaspoon of sweet paprika

1 tablespoon of flour

1/2 cup water

1 laurel leaf

Take your potato slices and dry them with ba paper towel.

Pour olive oil into a good  sized frying pan.How much? Well enough to generously coat the bottom of the pan. I used about 3/4 of a cup but you may require a bit more depending upon the pan you use! Don´t panic if you put a bit more than you need. The important thing is not putting too little!

Heat the oil on medium heat and put the potato slices in along with a generous dash of salt. Toss occasionally until they are soft.If you find that the potatoes are getting too brown, lower the heat a bit.

While the potatoes are frying, beat the 5 eggs in a bowl with a touch of salt.

When the potatoes are ready, remove them from the frying pan and place them in the bowl with the eggs. Try not to remove the olive oil as well. Mix the potatoes and eggs gently until the eggs are well incorporated.

Take the frying pan that you previously used for the potatoes and, if necessary, add a bit more olive oil to coat the bottom. Then heat the pan on low to medium heat. Whenit is hot, add the potato and egg mixture and with a spatula, flatten the mixture into the pan. It will slowly start to solidify. If you think the temperatura is too high, lower the heat a bit. I prefer that my tortilla takes ten minutes longer to make than to have the bottom burned and the rest ot the tortilla not solid.

When it is nearly completely solid, that is too say, just a tiny bit of the top is not solid, take a plate and cover the frying pan. Then flip the frying pan over. The tortilla will be reversed on the plate. If you see that the bottom of the tortilla is browner than you had hoped..don´t panic! That will eventually be the bottom of the tortilla, not the top! Now carefully return the tortilla to the frying pan, being sure that the uncooked part is now facing down.  Cook for about 5 minutes more. Then repeat the flipping process again. The sauce:Fry the onion in the same frying pan and oil you used to make the tortilla. When the onion is transluscent, add the flour and sweet paprika. Stir and then add the water so that it becomes a sauce-like consistency. Pour over the tortilla and then let it sit for 5 or 10 minutes, then serve!
