Delicious broccoli fritters

I know that not everyone is a fan of broccoli but this recipe could convert any doubters about this vegetable!

8 ounces (1 small-to-medium bundle, 225 grams) fresh broccoli (3 cups chopped into about 1/4 inch chunks)
2 to 3 large eggs
1/2 cup (65 grams) all-purpose flour
1/3 cup (30 grams) finely grated parmesan cheese
1 small clove garlic, minced
1/2 teaspoon Kosher salt, plus more to taste
A pinch of red pepper flakes or several grinds of black pepper
Olive oil for frying

Prepare your broccoli:

Steam your broccoli until tender but not too mushy. Drain and set aside to cool down.

In a large bowl, lightly beat your eggs. Add the flour, cheese, garlic, salt and pepper.  Mix well and add the broccoli. Mix gently and season.

Set aside a tray with a layer of paper towels to drain the fritters well after frying.

In a large frying pan, heat about 3 tablespoons of olive oil on medium heat. When the oil is hot, add one generous tablespoon of the broccoli mixture. Then flatten with a spatula. Fry each side for about two minutes then remove them to the paper towel lined tray to drain. Serve warm!
