Not long ago, on a whim, I decided to purchase some green olive jam. It was a bit on the pricey side but I figured that if I liked it, I could try making it at home.
My husband and I both loved it and so I searched for a recipe. I found one which was EASY and perfect to prepare for your next dinner party. This is great by itself, spread on a cracker or toast or with cheese. It is sweet but has the harp flavour of some lovely green olives. My husband tells me that it is better than the one we bought! 4 oz Spanish green olives
1 oz brown sugar
1 oz gr white sugar
To make the jam, take the green olives and wash them carefully under cold running water. Dry the olives well, place them in a blender or food processor and blend them until you obtain a smooth purée. Place the purée in a saucepan and add the brown sugar and the white sugar. Cook it slowly for about until the sugar melts and starts to caramelize. When it reaches a thick consistency remove from the heat and let the jam cool completely.
