I remember trying marmalade once and was not crazy about it. Still, I saw this recipe and figured I should try it. Maybe I just happened to try a particularly crappy marmalade that day. I think what intrigued me about this recipe was that the oranges were soaked in sugar overnight. This recipe is from a book entitled, ¨A la Mere de la Famille¨. I will talk about that cookbook in another post but all I can say is the cookbook is wonderful! The result of this marmalade is fantastic and it is good for sweet and savoury dishes. My mom was telling me that she marinated some ribs with soy sauce, mustard and marmalade. Sounds great? She is sharing the recipe with me so I will let you know how it is! In the mean time, I hope you like this!
5 oranges (The juicing kind, not large ones)
A pinch of salt
sugar (800g per kilo of fruit)
4 cardamom sedes
Make sure to sterilize the jars.
Wash the oranges and trim off the edges. Fill a large saucepan with wáter, add the salt and bring to a boil. Put the oranges in the wáter for 5 minutes then remove. Repeat this process two more times with unsalted wáter. Let the oranges cool before cutting them into small cubes.
Weigh the oranges and place them in a large bowl. Add 800 grams of sugar per kilo of fruit. (My 5 oranges added up to exactly one kilo). Add the cardamom seeds, cover with plastic wrap and leave to soak overnight.
The next day, transfer the marmalade to a large saucepan, bring to a boil and boil for 15 minutes. (I found that my orange chunks were a bito too chuncky so I just took a hand blender and blitzed them.) Remove from heat and spoon into sterilised jars.
