Hi everyone! Aren´t you all pleased with the change in weather? It still is hot over here in Madrid but there is a lovely cool wind in the mornings and the smell in the air is different. A few weeks ago, I decided to challenge myself to make recipes that involved ingredients in order of the alphabet in Spanish. I began with the alcachofa, the artichoke, and today it is the batata, the sweet potato or yam. This récipe is great for several reasons. 1. It is a great way to celebrate the beginning of fall. 2. If you have company coming over during Thanksgiving or Christmas, this will help you to make quick and easy appetizers. 3.It is easy and yummy!
- 500 g of sweet potatoes, peeled and chopped. (that is a little over 2 cups)
- 400 g of sugar (that is a little over 1.5 cups)
- 1/2 liter of water
- 1 clove
- Peel the sweet potatoes and chop them.
- Boil the water and sugar. Add the sweet potatoes and add cinnamon or clove if you want. Lower the heat to about low mdium and stir constantly. When the sweet potatoes soften, blitz them with a hand blender so that they are like a puree. If you don´t have enough water, gradually add a tablespoon. I found that the amount of water was pefect for me but that is just a general tip. Keep stirring until you have a thick consitency. To test readiness, put a spoonful on a cold plate and tip the plate. The jam should not run.
- Store and seal in a jar
Spread this on a cracker or bread and put a piece of brie on top. Toast it for a few minutes. Delicious. It is also good with cream cheese. If you find other combinations, do let me know!
