Marinated fried hake

I have always been a bit hesitant about frying fish. Even preparing it has always been a bit of a diagreeable thought because I am funny about picking out the bones. Still, I felt inspired to give it a go a few weeks ago for several reasons. First, my husband loves fried fish. Second, I was intrigued by the idea of marinating fish. Third, I just love my Claude Monet cookbook and if he liked it, I just had to try it. The French understand how to prepare food. The steps are so simple in this recipe and I have included a link which helped me to understand how to fry fish. The result? I still have some things to learn about frying but I had a super happy hubby!

Serves 2
250 ml olive oil
Juice of half a lemon
2 tablespoons chopped parsley
Half of a small onion, chopped
2 hake fillets (You can also use whiting or sole)
1/2 teaspoon salt
1/2 teaspoon pepper
60 g white flour

1. Prepare the marinade with half the oil, the lemon juice, parsley and onion. Place the fish in the marinade and season with salt and pepper. Cover and place in the fridge for 2 hours.

2. Drain the fish and dry completely. Dip in the flour. Heat the rest of the olive oil and as it begins to smoke, put in the fish. Fry until well browned.
