I know that gazpachos are not everybody’s cup of tea but I still have to share the recipes I find because they are healthy, easy and yummy. And in the summer they really are refreshing. The combination of fruit and veggies is unusual but this is not sweet. Just rich in flavour! Gazpacho is also great in that you can vary the quantities to fit your tastes. No gazpacho ever really tastes the same as you learn to perfect it!
1 kg of ripe tomatoes
1/2 red pepper, chopped
150 g pitted cherries
50 g onion, chopped
1/2 clove garlic, minced
80 g olive oil
30 g white wine vinegar
2 teaspoons salt
A large bowl of ice cold water.
1. In a pot, boil enough water to cover the tomatoes. Make a cut in the form of a cross where the stem of the tomato was. Place the tomatoes in the boiling o water for 15-20 seconds. Remove the tomatoes and place them in the ice water. The skins will easily peel off. When you have removed the skins, chop the tomatoes and put them in a blender.
2. Add all the rest of the ingredients. Add more salt or vinegar as needed. If it is too thick, add a touch of water.
3. Refrigerate for at least an hour. It is best served very cold. You can add an ice cube too!
