A gorgeous salad on a hot summer’s day.
6 medium tomatoes, chopped
4 -6 figs, peeled and sliced( I had 4 small ones)
1/4 cup raisins (I used Moscatel)
6 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt to taste
1 tablespoon of fresh tarragon
Blend the olive oil and balsamic vinegar.
Put the tomatoes, raisins and figs in a bowl. Drizzle the olive oil mixture and sprinkle the tarragon on top. ( You could also use mint or basil!) Add salt. Carefully mix the salad so the figs stay intact. Serve.
