Buckwheat biscuits

I don’t know about you, but there is something so nice about a cup of tea and a delicious bikkie to go with it. The kind of bikkie that is not too sweet but perfect to nibble on while reading a book. (A cozy blanket to accompany tge tea, bikkie and book is even better!)Well, I just found a new favourite cookie (on http://yummly.com )for tea time and I am really happy about it! I sprinkled a bit more brown sugar on the top. I hope you like this too!

200 grams buckwheat flour
100 grams flour
125 grams salted butter (softened)
120 grams brown sugar
1 egg
1/2 tsp baking powder
Brown sugar (for sprinkling on top)

Directions

Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.

Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.Use a cookie cutter of your choice to cut out the cookies.Place the cookies on a wax paper lined cookie sheet and bake at 180C for approximately 20 minutes. (My cookies took about half that time so keep an eye on them!)Remove the cookies from the oven and cool on a wire rack.

  1. Thank you for another great idea, this I want to try – I have such a sweet tooth and love baking but I’ve been trying to cut back on the sugar a bit, only I still neeeed desserts. These should be perfect 😀

    1. Oh you’re welcome! I first tried buckwheat in Brittany some years ago! I thought of you, being in France and liking sweets too, as I made them! These really are great with a tea 😘

  2. I’ve never made cookies with buckwheat, but have some on hand so I will be trying this recipe soon.
