The smell alone is just irresistible. If you like coffee, you will love this!
(Edit* This recipe makes about 1300g of dough, you will end up with one large roll if you decide not to make smaller rolls)
Bread flour 750g
Instant Yeast 8g
Instant coffee 10g
Mix the dry ingredients first and leave out the salt.
Then add the wet ingredients, butter, and salt.
The dough is very sticky, so don’t panic! I let the dough proof in a bowl for about 20 minutes, then I laid it onto a floured surface and made one large roll. Alternatively, you can separate them into equal pieces (80g).
The dough is left to proof again for an additional 20 minutes. ( Follow this step if separating into smaller rolls. If not, proceed to the next step)
After the second proofing, the dough is shaped into balls or left as one large roll. I put my large roll in a bowl and left it, covered with a tea towel, to double in size. If you are making smaller rolls, do the same. Shape then and leave to double in size.This takes about 60-80 minutes.
Set the oven to 185 degrees Celsius and bake for 15 minutes if making small rolIs and about 45 minutes if making a large roll. Brush the tops with egg white before putting them, or it, into the oven.
