I found this in a book that is all about recipes from villages in Spain. Personally, I love mushrooms and this is such an interesting conbination with the almonds I don’t have a name for the wild mushrooms I used but this is what they look like.
They are quite common here in Spain! Enjoy these as a starter or even as a main meal with pasta!
2 kilos wild mushrooms
4 cloves garlic
100 ml white wine
24 skinless almonds
100 ml olive oil
1 tablespoon sweet cayenne
1 tablespoon chopped parsley
Salt and pepper to taste
1. Rinse and dry mushrooms thoroughly.
2. Put the olive oil in a very large, deep frying pan and heat over medium heat. Add the mushrooms and two cloves of garlic. Stir frequently until the mushrooms reduce in size and lose water. When they gave begun to turn brown and have lost most of their liquid, add the white wine.
3.With a mortar, crush the rest of the cloves with the almonds and sweet cayenne. Add to the mushrooms, stir well and adjust seasonings. Serve hot, garnished with chopped parsley.
