Minty potato salad

My husband told me he was preparing a steak tonight so what is better tan a lovely potato salad to start off a yummy dindin? I adapted this recipe from taste.com. I also decided to do this because I was doing a minor excavation in my fridge and discovered that I had evrything I needed and then some.  Love it when that happens. Start with the amounts indicated but as with any salad, adjust according to your tastes. 🙂

Ingredients

1 kilo of boiling potatoes, peeled

2 tablespoons olive oil

2 tablespoons lemon juice

1 container (125 g) of plain yogurt

2 médium sides sticks of celery, chopped

6-7 large chopped fresh mint leaves

2 tablespoons chopped flat-leaf parsley leaves

2 tablespoons of fresh chives

2 tablespoons of capers

1 can of pitted black olives

half of a large red pepper, chopped

salt and pepper to taste
