I am happily discovering how delicious asparagus can be. Another great way to celebrate Spring!
* A note about amounts. I like less pasta and more asparagus. You may prefer the contrary. A pound of asparagus is a lot for two people so you could probably serve 4 but in smaller servings. It is up to you. 🙂
1 lb. of asparagus, trimmed (You can cut off the tough ends) and cut into small pieces.
2 tablespoons of olive oil
Fresh ground pepper
Juice of 1 fresh lime (Have an extra lime ready just in case you think it needs more citrus).
2 tablespoons of fresh mint, chopped
2 cloves of garlic, minced ( Add more if you are especially keen on garlic:))
1. Heat the oil frying pan on low to medium heat and then add the garlic. Sauté and when it is golden, add the asparagus and mint. Then sprinkle with salt and pepper to taste, cooking and stirring intermittently for about 5 minutes until bright green and fragrant.
2 Put on a plate of warm pasta and sprinkle lime juice over the asparagus.(You could sprinkle it with grated parmesan too!)
