Super delicious oat bread

I found this recipe on one of my favourite blogs homegrown-homemade.com and I confess that it took me by surprise.  Oats have never been something I have been wild about but this recipe has changed my mind! That is one reason why reading blogs can be so much fun.  You discover new techniques and flavours and you feel great afterwards.  I confess I needed the cheering up because I have been home sick with laringitis for the past two days.

Recipe:
350 grams all purpose flour
150 grams whole grain spelt flour
100 grams rolled oats
100 ml soy milk * (I used regular milk)
7 grams salt
20 grams butter (if you want a vegan version, use a non-dairy butter)
7 grams dry yeast *(I used 21 grams of fresh yeast)
1 tsp baking powder
250 ml water (lukewarm)

What to do!

In a small bowl, soak the rolled oats in the milk. Set aside to let the oats absorb.

Mix all the dry ingredients. Add the oats,  butter and water.

Mix until your dough is firm and elastic.

Put in a bowl, cover it with a tea towel and let it rise until it is doubled in size. About 1 -2 hours depending upon the temperature in your house.

Turn it onto a lightly floured surface and knead it into the desired shape. Let it rise for an hour more.

Preheat oven to 220°C

Put it on a baking sheet and bake for 30 minutes.  If your top is getting too brown, cover it with foil.
