When I was living on my own in Málaga, I faithfully bought my monthly issue of Cocina Viva magazine. I used to love checking out all the goodies and it really introduced me to Spanish cooking. I collected the magazines, and put the recipes in order by putting them into categorised binders. Looking back, I am somewhat shocked I was so organised! I still have those binders with my recipes and notes marked. This recipe is from those binders and although the ingredients are so simple and cheap, the flavour is wonderful. I adapted it slightly from the original which didn’t involve any baking.
Preheat oven to 220°
1000g potatoes, peeled and thinly sliced
2 large onions, chopped
1 teaspoon salt
Mix the potatoes and onions in a bowl. Add the salt and mix once more.
Pour olive oil into a frying pan on low heat. Use just enough to evenly coat the bottom. I used 2 tablespoons.
Add the potatoes and onions and fry gently on low heat until the onions are transluscent and the potatoes are soft. This takes about 20 minutes.
Pour the ingredients into a baking pan. Spread them even evenly and bake for around 20 to 25 minutes, or until the top starts turning brown.
It tastes incredible! You can serve this as a tapa or a main dish.
