I don’t often make cookies, but when I saw these on the blog ,James’s Recipes I had to make them. I like the flexibilty of the ingredients and the fact that it is easy!
Makes about 20 biscuits
200g Butter, softened
250g Plain Flour
1 tsp Vanilla Extract
90g Dried Fruit* (e.g, Cranberries, Dried Pineapple, Dried Mango) – no more than 1cm pieces.[ I used dried strawberries, cherries, cranberries and apricots]
90g Chopped Nuts* (e.g., Pistachio, Pecans) [I used walnuts, pistachios and almonds]
Cream together the butter, sugar and vanilla extract in a large bowl with a fork or wooden spoon
Mix in the flour until well combined (I find a fork works best for this)
Stir in the fruit and nuts (make sure the pieces are not too big)
Bring the dough together into a ball and place on a sheet of cling film
Shape into a log and wrap tightly in the cling film. Roll on the kitchen surface to get a well compressed log & refrigerate for at least 1 hr, or overnight. [Next time, I would do overnight!]
Unwrap and cut into slices maybe 8mm thick
Place on baking trays with a little space between and bake at 160oC Fan for about 15 minutes until golden – check after 10 minutes & turn the sheets if necessary. [I used parchment paper!]
Allow to cool & store in an airtight container.
They are delicious.
