Lyonnaise garlic and herb cheese

This is a recipe I found in  “Around my French Table” by Dorie Greenspan. While the recipe was great, I did add a shot of tabasco just to wake up the flavours slightly. You decide! This is great with veggies or crackers! I also mixed it with chopped tomatoes and black olives for a delicious salad.

1 cup fromage blanc [A lot like cottage cheese in the States)
1/2 small shallot, minced
1/2 garlic clove, minced
2 tablespoons chives, minced
1 tablespoon minced parsley
1 tablespoon tarragon, minced
1 teaspoon red wine vinegar
1 tablespoon olive oil
salt and pepper to taste
*A shot of Tabasco

This is how you make it:

Put fromage blanc in a medium bowl and add remaining ingredients.Adjust seasonings to taste.Put in a jar to cover and refrigerate a minimum of three hours or best overnight.
