500g pack puff pastry well chilled ( It is easier to roll it when it is cold.
1/2 cup soft goat’s cheese, crumbled or chopped
1/2 cup finely chopped sun dried tomatoes
1 cup toasted walnuts, grinded
*You can use more or less of an ingredient according to your tastes.
Preheat oven to 200C/180C
Roll out the puff pastry to a large rectangle on a lightly oiled surface.Spread the walnuts over the pastry, leaving a small border around the edges. Spread the cheese and sun dried tomatoes evenly. Roll up one edge of the pastry into the center, then repeat with the opposite edge to meet in the middle.
Important: Place your roll in the fridge for about an hour.
Now cut into 20 slices with a fine, sharp knife. You will find that it is easy to slice because it it cold. Place on a baking tray coveted with parchment paper or foil and bake for 10-12 mins until golden.
If you prefer to substitute and ingredient for one you prefer, go for it. You can really get creative with these little guys!
