Zebra cake

My husband usually sleeps late on Saturdays. He works hard enough so I understand. Counting upon consistency, I planned to make him this cake while he slept.
It sounded like a good idea at the time.
I got up early and began measuring ingredients. Just as I was about to start the recipe, who should decide to resurrect? He happily sailed into the kitchen wishing me a happy Valentine’s day and I was stunned. Haha…so much for consistency. I gave him a hug and said, “Look, you see nothing ok?” He agreed and said, “Of course..nothing!” Good to start the day with a laugh though I really was flustered!

I hope you enjoy this.  It is a recipe that took some time to do but it was worth it. I made two cakes of different sizes and put one on top of the other. I did this because my cakes did not rise as much as I had anticipated. No matter, I improvised and the results were still great!

Ingredients:
4 eggs
100g butter
90 g milk
250 g cake flour
10 g baking powder
25 g cocoa powder
Grated peel of one orange
A pinch of salt

*Round removeable bottom baking pan 22 cm or 28 cm wide. I honestly think that the bigger size is better.

*Preheat oven to 170°
*Line the bottom of the pan with parchment paper and grease it.
*Separate the eggs and put them in two dry,clean bowls.
*Put the butter in the bowl with the egg yolks in it. Beat for 5 minutes with an electric mixer.
*Add the sugar and beat 5 minutes more.
* Add the milk and beat for 1 minute.
*Add the sifted flour and baking powder. Beat until everything is incorporated well. Set aside.

*Now take the bowl of egg whites. Add a pinch of salt and beat until firm.

*Mix the egg whites with the yolk mixture, using a spatula.
*Separate the mixture evenly into two bowls. Add the orange peel to one and in the other, the cocoa. Mix until incorporated well.

* Put each batter in separate cake decorators. Make sure the opening is medium sized. Put a drop in the middle of the baking pan. Now alternate between each tube to make circles.

Bake for 10 to 15 minutes.
Remove the cake as soon as it begins to cool down.
Leave to cool down completely. on a wire rack.
