Just pure delight..freshly ground coffee beans (you can use instant coffee as well) combined with dark chocolate chunks. Bring it on!
500 grams strong bread flour
35 grams sugar
12 grams salt
100 grams butter (softened)
30 grams (Yes, 30) dry yeast or 10 grams of fresh yeast
150 grams dark chocolate
3 tablespoons of ground coffee or 6 tablespoons of instant coffee
1 beaten egg
*I used a bar of dark chocolate and broke the pieces up.
Mix the flour, sugar, salt, milk, water and yeast.
Add the butter and gently begin to knead to form a dough.
Add the coffee, gradually if you prefer, and knead it evenly into the dough.
Then add your chocolate gradually.
Then put it in a bowl, cover it and leave it for 45 minutes.
No massive growth but looking good!
Now separate the ball into pieces weighing 80 grams each. Let them rest for 15 minutes.
Now form them into oblong shapes.
Let them rest for 2 hours. About half an hour before the time is up, preheat your oven to 210°.
After 2 hours, the appearance is different but no massive rising. Relax!
Coat them with the beaten egg and pop them in the oven for 8-10 minutes. The tops will brown so to prevent too much browning, cover them with foil.
Let them cool on a wire rack. This made 12 small rolls. Perfect.
I tried one as it was cooling down and it was marvelous.
👍🕐 KNOW your oven and remember that not all ovens are created equal. What takes less time in one oven may take a bit more time in another.
– Use different types of chocolate.
– Combine dark and milk etc.
